Ingredients for French Soup Recipe

  • 4 pounds of beef or other meat
  • Water
  • 3 small sliced carrots
  • 3 medium-sized onions, chopped
  • 2 cut-up turnips
  • 1 head of celery, sliced
  • 1 bunch of fresh thyme
  • 1 bay leaf
  • parsley
  • salt

Instructions

  1. Put 4 pounds of meat into a stock pot with 3 quarts of water; set over low heat and let it boil gently, carefully taking off scum that will rise to the top.
  2. Pour in teacup of cold water to help scum to rise.
  3. When no more scum rises, add carrots, onions, turnips, celery, thyme, bay leaf, parsley and 2 teaspoons salt.
  4. Let it boil gently for two hours.
  5. If necessary, add more water.
