Ingredients for Foam Icing
- 1 white of egg
- 1 cup sugar
- ½ cup water
- 1 teaspoon baking powder
- Boil sugar and water to 220 degrees F. Dissolve sugar in the water and boil to 220 degrees F. Put your pan containing the dissolved sugar and water (syrup) on a hot fire and wait until it boils.To test for 220 degree temperature,

Instructions
- Take, with a spoon, a little of the syrup and drop slowly in cold water.
- The sugar should drop out from the spoon into threads.
- As more water evaporates and the temperature gets higher, a sample of syrup dropped into cold water forms on the main mass spherical globules, that resemble dark pearls.
- They will gradually mix with the rest.
- When this happens, remove from fire.
- Beat the white of egg stiff and add the syrup (sugar) hot to the white of egg, beating constantly.
- Add baking powder.
- When the icing starts to foam, spread on cake.
