Ingredients for Finnan Haddie With Rice
- 1 finnan haddie, cut in 4 pieces
- 1½ cups rice
- 1 cup milk, scalded
- 2 tablespoons butter
- Seasonings to taste

Instructions
- Boil rice in salted water for about 20 minutes.
- Pour over the rice the scalded milk.
- Add butter and seasonings.
- While the rice is cooking, boil the finnan haddie in salted water for about 5 minutes.
- Remove from water, and bone and skin it.
- Mix with the rice and serve.
