Ingredients for Finnan Haddie Potato Pie Recipe

Filling:

  • ½ finnan haddie, boiled, flaked
  • 3 potatoes, peeled, sliced
  • 1 tomato, sliced
  • 1 cup water
  • 3 tablespoons butter
  • 1 green pepper, seeded, cut in pieces
  • Seasonings to taste

Pie crust:

  • 1 1/4 C flour
  • 1 1/2 tsp. salt
  • 1 tsp. sugar
  • 1/2 C shortening
  • Cold water

Instructions

Piecrust:

  1. Sift flour and salt.
  2. Add sugar.
  3. Working quickly, with the tips of the fingers, blend shortening into the mixture.
  4. Use enough cold water to make the mixture adhere together.
  5. Turn on floured pastry board and roll, handling as little as possible.

Pie:

  1. Mix all ingredients in a baking dish.
  2. Moisten edges of baking dish.
  3. Cover baking dish with pie crust.
  4. Press pie crust slightly over the edge of baking dish.
  5. Trim.
  6. Bake in moderate oven (300-375 degress F) for 20 minutes.
