Ingredients for Farmer's Chowder Recipe

  • 6 potatoes
  • Half a pound of salt pork
  • Minced onion
  • Minced parsley
  • Pepper
  • 1 pint milk
  • 1 pint water
  • 1 tablespoon butter
  • Flour

Instructions

  1. Parboil and slice potatoes.
  2. Chop and fry salt pork. When it begins to crisp, add a minced onion and cook to a light brown.
  3. Pack the potatoes, pork, and onion in a soup kettle, sprinkling each layer with minced parsley and pepper.
  4. Add the hot pork fat; cover with a pint of boiling water and cook gently for half an hour.
  5. Turn into a colander and drain the liquor back into the pot.
  6. Have a pint of hot milk ready, into which a tablespoon of butter rolled in flour has been stirred.
  7. Place this in the kettle containing the liquor. Cook one minute, add the potatoes to the kettle, and serve.
