Escalloped Eggs Recipe

Ingredients for Escalloped Eggs Recipe

  • 6 hard cooked eggs
  • 1/3 cup ripe olives
  • 2 cups bread crumbs
  • 1 1/2 cups milk
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 teaspoon salt

Instructions

  1. Cook the eggs by putting them in a pan of cold water.
  2. When the boiling point is reached, cover and let simmer for about twenty minutes.
  3. Make a white sauce by rubbing together the flour and butter and one-half teaspoon salt.
  4. Slowly add the warm milk slowly. Cook the sauce in a double boiler fifteen to twenty minutes.
  5. Butter a baking dish and place in the bottom 1/4 of the bread crumbs. Over the crumbs, thinly slice three of the hard cooked eggs.
  6. Add half of the chopped olives and half of the white sauce.
  7. Spread another 1/4 of the bread crumbs, adding the remainder of the egg, olives, and white sauce.
  8. Finish by spreading the remaining half of the buttered crumbs on top.
  9. Bake twenty minutes in a moderate oven or until nicely browned.
