Ingredients for Eggs Au Beurre Noir Recipe
- 1/2 dozen eggs
- 3 ounces of butter
- A few sprinkles of salt and some nutmeg.
- Toast wetted with vinegar

Instructions
- Prepare half a dozen eggs as if for poaching by breaking each one separately into a cup.
- Brown 3 ounces of butter in a large frying-pan and slide the eggs from the cups into it. Depending on the size of the eggs, they will set in 2 1/2 to 3 1/2 minutes.
- When they have set well, ladle the burnt butter over them and sprinkle salt and some nutmeg.
- Serve on toast wetted with vinegar.
- Serve two eggs for each person.
