Ingredients for Eggs Au Beurre Noir Recipe

  • 1/2 dozen eggs
  • 3 ounces of butter
  • A few sprinkles of salt and some nutmeg.
  • Toast wetted with vinegar

Instructions

  1. Prepare half a dozen eggs as if for poaching by breaking each one separately into a cup.
  2. Brown 3 ounces of butter in a large frying-pan and slide the eggs from the cups into it. Depending on the size of the eggs, they will set in 2 1/2 to 3 1/2 minutes.
  3. When they have set well, ladle the burnt butter over them and sprinkle salt and some nutmeg.
  4. Serve on toast wetted with vinegar.
  5. Serve two eggs for each person.
