Ingredients for Eggs "alla Romana" Recipe
- 4 eggs
- 1 tablespoon milk or cream
- Salt and pepper to taste
- 1 tablespoon grated Parmesan cheese
- Pinch of parsley
- 2 tablespoons heated butter
- 1/4 cup ham
- 2 slices onion
- 1/2 celery stalk
- 1 small carrot
- 1 piece parsley
- 1 small piece beef
- 1 1/2 tablespoons red wine (or white)
- 1 tablespoon tomato paste diluted with water or 4 fresh tomatoes

Instructions
- Beat the eggs. Add milk or cream, salt and pepper, grated Parmesan cheese, and chopped parsley.
- With this, make 3-4 omelettes of medium thickness.
- Allow the omelettes to cool. Then, cut them into 1/4 inch-wide strips.
- Place the strips in a saucepan with heated butter. Heat through thoroughly and serve with grated cheese and the following meat sauce.
MEAT SAUCE
- Chop up some ham with a little onion, celery, carrot, and parsley.
- Add a small piece of beef and cook until beef is well colored.
- Then, add wine and cook until absorbed.
- Add tomato paste or fresh tomatoes and boil fifteen minutes.
