Ingredients for Eggs "alla Romana" Recipe

  • 4 eggs
  • 1 tablespoon milk or cream
  • Salt and pepper to taste
  • 1 tablespoon grated Parmesan cheese
  • Pinch of parsley
  • 2 tablespoons heated butter
  • 1/4 cup ham
  • 2 slices onion
  • 1/2 celery stalk
  • 1 small carrot
  • 1 piece parsley
  • 1 small piece beef
  • 1 1/2 tablespoons red wine (or white)
  • 1 tablespoon tomato paste diluted with water or 4 fresh tomatoes

Instructions

  1. Beat the eggs. Add milk or cream, salt and pepper, grated Parmesan cheese, and chopped parsley.
  2. With this, make 3-4 omelettes of medium thickness.
  3. Allow the omelettes to cool. Then, cut them into 1/4 inch-wide strips.
  4. Place the strips in a saucepan with heated butter. Heat through thoroughly and serve with grated cheese and the following meat sauce.

MEAT SAUCE

  1. Chop up some ham with a little onion, celery, carrot, and parsley.
  2. Add a small piece of beef and cook until beef is well colored.
  3. Then, add wine and cook until absorbed.
  4. Add tomato paste or fresh tomatoes and boil fifteen minutes.
