Ingredients for Egg Timbales Recipe 2

  • 1 tablespoon butter
  • 1 tablespoon flour
  • 2/3 cup scalded milk
  • 1 tablespoon chopped parsley
  • 3 eggs
  • Salt and pepper
  • Cayenne
  • Celery salt

Instructions

  1. Mix together the butter, flour, and milk. Then, add slightly beaten egg yolks.
  2. Add all the seasonings, then fold in stiffly beaten egg whites.
  3. Fill greased baking dishes 2/3 full of the mixture.
  4. Set dishes in a pan of hot water and poach in a moderate oven at 350 degrees for 20 minutes or until firm.
  5. Arrange on a platter and serve with tomato cream sauce.
