Ingredients for Egg Souffle Recipe

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 cup scalded milk
  • 1 cup cream
  • 4 eggs
  • 1 teaspoon salt
  • Few grains cayenne

Instructions

  1. Mix the butter and flour and gradually pour on scalded milk and cream.
  2. Cook in double boiler for 5 minutes.
  3. Beat egg yolks until thick and lemon-colored.
  4. Add eggs to double-boiler and remove from heat.
  5. Add seasonings and fold in stiffly-beaten and dry egg whites.
  6. Place in a buttered dish, or buttered individual moulds, and set in a pan of hot water.
  7. Bake in a slow oven until firm.
  8. Serve with White Sauce I Recipe and season with celery salt, paprika, and onion juice.
