Ingredients for Egg Plant And Potatoes

• 1 egg plant, peeled, diced small
• 3 potatoes, peeled, diced small
• 3 tablespoons butter
• Flour
• Seasonings to taste

Instructions

1. Cover egg plant with enough flour just to adhere to the dice and shake to remove excess flour.
2. Mix with potatoes.
3. Put butter in frying pan and cook until it foams.
4. Put egg plant and potatoes in frying pan and season to taste.
5. Put frying pan in hot oven and cook for 8 to 10 minutes.
