Ingredients for Egg Muffins Recipe

  • 1 quart flour
  • 1 tablespoon sugar
  • 1 teaspoon salt
  • 1 large tablespoon butter
  • 2 teaspoons baking-powder
  • 3 eggs
  • 1 1/4 pints milk

Instructions

  1. Sift together flour, sugar, salt, and powder.
  2. Rub in the butter and add the beaten eggs and milk. Mix quickly into a smooth batter, a little firmer than for griddle cakes.
  3. Fill a greased muffin tin with the batter until 2/3 filled.
  4. Bake in a hot oven for 15 minutes.
