Curried Mutton Recipe

Instructions

  1. Put 4 ounces of butter into a stewpan, and pound 6 middle-sized onions in a mortar; add the onions to the butter with an ounce of curry powder, a teaspoon of salt, a dessertspoonful of flour, and half a pint of cream.
  2. Stir until smooth.
  3. Fry 2 pounds of mutton, cut in neat pieces, without bone.
  4. Let them be of a light brown color.
  5. Lay the meat into a clean stewpan, and pour the curry mixture over.
  6. Simmer until the meat is done.
  7. Time, two hours to simmer.
  8. Sufficient, two pounds for four or five persons.
