Ingredients for Curried Eggs Recipe 1
- 2 tablespoons vegetable shortening
- 6 hard-cooked eggs
- 1 small chopped onion
- 1 chopped sour apple
- 2 teaspoons curry powder
- 1 lemon
- 4 chopped butternuts or 6 chopped almonds
- 3 tablespoons cornstarch, moistened with milk
- 2 cups milk
- 1/4 teaspoon salt

Instructions
- Fry onion in vegetable shortening for a few minutes and add curry powder, apple, nuts, and cornstarch moistened with milk.
- Simmer fifteen minutes stirring occasionally from time to time.
- If too thick, add a little white stock or water.
- Cut eggs in half and lay them in the sauce with the salt. Allow them to get hot throughout.
- Put eggs into deep hot dish, strain sauce over them, and garnish with croutons and lemon slices.
