Ingredients for Curried Chicken Recipe

  • 1 chicken (3 pounds), cut in serving pieces (reserve gizzards and liver)
  • 1/3 cup butter, melted
  • 2 onions, sliced thinly
  • 2 teaspoons salt
  • 1 tablespoon curry powder
  • Boiling water
  • Rice for serving

Instructions

  1. Put butter in a hot frying pan, add chicken, and cook, tightly covered, 10 minutes.
  2. Then add liver and gizzard, and continue cooking for 10 minutes longer.
  3. Add sliced onions to chicken with 2 teaspoons salt and 1 tablespoon curry powder.
  4. Add sufficient boiling water to cover, and simmer until chicken is tender.
  5. Remove chicken and strain liquor. Mix flour and water to make a roux, and add it to the liquid. Stir, over heat, until thickened.
  6. Make border of boiled rice around platter or serving dish, arrange chicken in center, and pour curry sauce over it.
