Ingredients for Crowned Potato Soup Recipe

• 12 potatoes
• 1 onion
• Beef drippings
• Flour
• Butter
• Salt
• Pepper
• Parsley

Instructions

1. Peel and quarter potatoes.
2. Fry the potatoes together with a sliced onion in a soup pot that has 3 tablespoons of beef drippings.
3. When the potatoes have browned, add 2 quarts of water, and simmer until the potatoes have become soft.
4. Rub through a colander, return to the pot, and thicken with 2 tablespoons of browned flour rubbed to a paste with a tablespoon of butter.
5. Stir until smooth.
6. Season with salt and pepper and add a tablespoon of chopped parsley.
