Ingredients for Cream Puree Of Chestnuts Recipe

  • 1 quart chestnuts
  • 1 quart white stock
  • 1/2 teaspoon celery salt
  • 1 teaspoon white pepper
  • 1 sliced onion (Bermuda)
  • 2 stalks chopped celery
  • 1 pint cream
  • 1 tablespoon butter
  • salt
  • 1 tablespoon mushroom ketchup

Instructions

  1. Roast chestnuts and then shell them.
  2. Put them in a saucepan and add white stock, celery salt, white pepper, onion, and celery.
  3. Simmer until the chestnuts are very tender. Press first through a colander and then through a sieve.
  4. Return the puree to the kettle and stir in a pint of cream and one tablespoon of butter; allow it just to reach the boiling point, seasoning with a teaspoon of salt and a tablespoon of mushroom ketchup.
  5. Serve immediately with croutons.
