Ingredients for Cream Of Watercress Recipe
- 1 quart of white stock or beef stock and water
- 2 bunches of chopped watercress
- 2 tablespoons of butter
- 2 tablespoons of arrowroot, cooked thoroughly
- 2 cups of hot milk
- 1/2 teaspoon salt
- Dash of cayenne
- 1 cup of whipped cream
- 1/2 cup of fresh cress tips
Instructions
- Put white stock or beef stock and water on the stove with chopped watercress and 1 tablespoon of butter.
- Simmer twenty minutes.
- When it begins to boil, add 1 tablespoon of butter, the arrowroot, hot milk, salt, and a dash of cayenne.
- Garnish with 1 cup of whipped cream and 1/2 cup of fresh cress tips.
