Cream Of Watercress Recipe

Ingredients for Cream Of Watercress Recipe

  • 1 quart of white stock or beef stock and water
  • 2 bunches of chopped watercress
  • 2 tablespoons of butter
  • 2 tablespoons of arrowroot, cooked thoroughly
  • 2 cups of hot milk
  • 1/2 teaspoon salt
  • Dash of cayenne
  • 1 cup of whipped cream
  • 1/2 cup of fresh cress tips

Instructions

  1. Put white stock or beef stock and water on the stove with chopped watercress and 1 tablespoon of butter.
  2. Simmer twenty minutes.
  3. When it begins to boil, add 1 tablespoon of butter, the arrowroot, hot milk, salt, and a dash of cayenne.
  4. Garnish with 1 cup of whipped cream and 1/2 cup of fresh cress tips.
