Ingredients for Cream Of Mushroom Soup Recipe 2

  • 1 quart fresh mushrooms
  • Boiling water, enough to cover
  • 2 quarts of chicken or veal stock
  • 1 tablespoon of flour
  • 1 tablespoon of butter
  • 1 cup of rich cream or milk
  • Season with salt and pepper

Instructions

  1. Wash and peel the mushrooms, put them in enough boiling water to cover them, and boil until very tender.
  2. Mash and rub them through a sieve.
  3. Add the stock to the pulp.
  4. Rub the flour and butter together until smooth. Stir it into a cup of rich cream or milk, and stir until smooth.
  5. Add it to the soup, season with salt and pepper, let it boil up, and serve.
