Ingredients for Cream Of Mushroom Soup Recipe 2
- 1 quart fresh mushrooms
- Boiling water, enough to cover
- 2 quarts of chicken or veal stock
- 1 tablespoon of flour
- 1 tablespoon of butter
- 1 cup of rich cream or milk
- Season with salt and pepper
Instructions
- Wash and peel the mushrooms, put them in enough boiling water to cover them, and boil until very tender.
- Mash and rub them through a sieve.
- Add the stock to the pulp.
- Rub the flour and butter together until smooth. Stir it into a cup of rich cream or milk, and stir until smooth.
- Add it to the soup, season with salt and pepper, let it boil up, and serve.
