Ingredients for Cream Of Lettuce Recipe 2

  • 3 heads of lettuce, removing all the dead leaves
  • 1 1/2 pints of white stock
  • 1 tablespoon of flour
  • A little milk or water
  • 1 tablespoon of butter
  • Season with salt and pepper
  • A little sugar
  • Dash of mace

Instructions

  1. Cleanse the lettuce carefully.
  2. Place into the inner pan of a double boiler and bring to boiling as quickly as possible, so as to retain the color.
  3. When tender, press through a fine sieve, place back into the saucepan over the heat.
  4. Add white stock and bring to a boil.
  5. Stir the flour smooth with a little milk or water and add to the soup, stirring briskly, until of a creamy consistency.
  6. Then, add a tablespoon of butter; season with salt and pepper, a little sugar, and a dash of mace.
  7. Serve very hot.
