Ingredients for Cream Of Lettuce Recipe 2
- 3 heads of lettuce, removing all the dead leaves
- 1 1/2 pints of white stock
- 1 tablespoon of flour
- A little milk or water
- 1 tablespoon of butter
- Season with salt and pepper
- A little sugar
- Dash of mace
Instructions
- Cleanse the lettuce carefully.
- Place into the inner pan of a double boiler and bring to boiling as quickly as possible, so as to retain the color.
- When tender, press through a fine sieve, place back into the saucepan over the heat.
- Add white stock and bring to a boil.
- Stir the flour smooth with a little milk or water and add to the soup, stirring briskly, until of a creamy consistency.
- Then, add a tablespoon of butter; season with salt and pepper, a little sugar, and a dash of mace.
- Serve very hot.
