Ingredients for Cream Of Chestnut Soup Recipe

  • 2 cups mashed chestnuts
  • 4 tablespoons butter
  • 4 tablespoons flour
  • 6 cups milk
  • 1½ teaspoons salt

Instructions

  1. Prepare the chestnuts by immersing in boiling water, and cooking for ten minutes.
  2. Remove them from the hot water a few at a time, and with a sharp paring knife quickly remove both skins.
  3. Mash them through a colander.
  4. Make of the remaining ingredients a white sauce.
  5. Add the mashed chestnuts.
  6. Reheat, and serve.
