Ingredients for Cream Of Cheese Recipe

  • 1 quart of milk
  • 1 blade of mace
  • 1 tablespoon of grated onion
  • A bit of red pepper
  • 2 tablespoons of flour
  • 2 tablespoons of butter
  • 1 cup of cold milk
  • 1/2 cup of grated cheese
  • 1 teaspoon of salt
  • Two egg yolks

Instructions

  1. Put milk, mace, onion, and red pepper into a kettle.
  2. Let come to a boil.
  3. Cream the flour with the butter. Add a cup of cold milk and stir slowly into the milk in the boiler.
  4. When it boils, strain, add the grated cheese and stir until it is melted.
  5. Add salt and pour over the beaten yolks of two eggs, stirring all the time.
  6. Whip until frothy and serve with wafers or bread sticks.
