Ingredients for Cream Of Cheese Recipe
- 1 quart of milk
- 1 blade of mace
- 1 tablespoon of grated onion
- A bit of red pepper
- 2 tablespoons of flour
- 2 tablespoons of butter
- 1 cup of cold milk
- 1/2 cup of grated cheese
- 1 teaspoon of salt
- Two egg yolks
Instructions
- Put milk, mace, onion, and red pepper into a kettle.
- Let come to a boil.
- Cream the flour with the butter. Add a cup of cold milk and stir slowly into the milk in the boiler.
- When it boils, strain, add the grated cheese and stir until it is melted.
- Add salt and pour over the beaten yolks of two eggs, stirring all the time.
- Whip until frothy and serve with wafers or bread sticks.
