Ingredients for Cream Of Barley Soup Recipe
- 3 pints of chicken broth or stock
- 1 sliced onion
- 1 small stick of cinnamon
- 1 blade of mace
- 1 cup of barley
- 1/2 pint of boiling cream or milk
- 2 tablespoons of butter
- Salt and pepper to taste
- 3 egg yolks
- 1 cup of milk

Instructions
- To chicken broth or stock, add a sliced onion, cinnamon, mace, and barley.
- Let it boil up and then simmer slowly, for four or five hours, and strain through a fine sieve.
- Put it back in the saucepan and add boiling cream or milk with 2 tablespoons of butter. Season to taste with salt and pepper.
- Beat the egg yolks, mix with them a cup of milk; pour gradually into the soup, stirring briskly for two minutes.
- It must not boil after the eggs are added.
- Serve with croutons or toasted wafers.
