Ingredients for Cream Of Barley Soup Recipe

  • 3 pints of chicken broth or stock
  • 1 sliced onion
  • 1 small stick of cinnamon
  • 1 blade of mace
  • 1 cup of barley
  • 1/2 pint of boiling cream or milk
  • 2 tablespoons of butter
  • Salt and pepper to taste
  • 3 egg yolks
  • 1 cup of milk

Instructions

  1. To chicken broth or stock, add a sliced onion, cinnamon, mace, and barley.
  2. Let it boil up and then simmer slowly, for four or five hours, and strain through a fine sieve.
  3. Put it back in the saucepan and add boiling cream or milk with 2 tablespoons of butter. Season to taste with salt and pepper.
  4. Beat the egg yolks, mix with them a cup of milk; pour gradually into the soup, stirring briskly for two minutes.
  5. It must not boil after the eggs are added.
  6. Serve with croutons or toasted wafers.
