Ingredients for Cream Of Asparagus Recipe 1

  • 1 can asparagus
  • 2 qts. white stock
  • 2 tablespoons butter
  • 3 tablespoons flour
  • 6 peppercorns
  • ½ teaspoon salt
  • ½ can cream

Instructions

  1. Cut off tips of asparagus and reserve.
  2. Add stalks of asparagus with the seasoning to the stock.
  3. Boil thirty minutes.
  4. Strain through puree, thicken with flour cooked in melted butter.
  5. Add the asparagus tips and cream.
  6. Bring to boiling point and serve with croutons.
