Ingredients for Cream Puree Of Chestnuts Recipe
- 1 quart chestnuts
- 1 quart white stock
- 1/2 teaspoon celery salt
- 1 teaspoon white pepper
- 1 sliced onion (Bermuda)
- 2 stalks chopped celery
- 1 pint cream
- 1 tablespoon butter
- salt
- 1 tablespoon mushroom ketchup

Instructions
- Roast chestnuts and then shell them.
- Put them in a saucepan and add white stock, celery salt, white pepper, onion, and celery.
- Simmer until the chestnuts are very tender. Press first through a colander and then through a sieve.
- Return the puree to the kettle and stir in a pint of cream and one tablespoon of butter; allow it just to reach the boiling point, seasoning with a teaspoon of salt and a tablespoon of mushroom ketchup.
- Serve immediately with croutons.
