Instructions
- To two cups of grated sweet corn add one cup of flour sifted with one teaspoon of baking powder, two teaspoons of salt and a quarter teaspoon of paprika; add also half a cup of finely chopped celery and the beaten yolks of two eggs.
- Mix thoroughly and then fold in the stiffly whipped whites of two eggs.
- Drop by spoonfuls into hot fat and slowly fry to a pale brown.
- The fat should be about half an inch in depth in the pan-deeper than is required for sauteing, but not deep enough to cover the fritters.
