Ingredients for Corn Bisque Recipe

  • 1 can corn
  • 1 teaspoon sugar
  • 2 tablespoons flour
  • 2 tablespoons butter
  • 1 pint milk (heated)
  • 2 eggs
  • Seasonings to taste

Instructions

  1. Drain the liquor from a can of corn.
  2. Chop the corn very fine, turn into a saucepan containing a quart of salted water, and simmer gently for an hour.
  3. Then rub through a colander; place again over the fire and add sugar and 2 butter rubbed into flour.
  4. Stir until it becomes smooth, and then pour slowly upon heated milk.
  5. Season to taste with salt, and then pour slowly upon 2 well-beaten eggs.
  6. Serve at once.
