Instructions

  1. Meat should be removed from the paper as soon as it comes from the market, as the paper absorbs the juices.
  2. Wipe with a damp cheesecloth or bit of linen but never place fresh meat or poultry in water to soak even for five minutes, as cold water extracts the juices.
  3. In roasting meats allow fifteen minutes to heat the piece through and ten minutes for each pound if liked rare, or if wanted well done, twelve minutes additional for each pound.
  4. For poultry, game and pork, allow fifteen minutes for each pound.
