Ingredients for Consomme Recipe
- 3 pounds each of lean beef and knuckle of veal
- 4 four quarts water
- 2 teaspoons salt
- 1 onion
- 1 small carrot
- 1 small turnip
- 1 blade mace
- 1 inch of cinnamon stick
- A sprig of thyme
- Pinch of sweet marjoram and summer savory
- 1 bay leaf
Instructions
- Use three pounds each of lean beef and knuckle of veal.
- Cut into small pieces and add to water.
- Add salt, onion, carrot, turnip, mace, cinnamon, thyme, sweet marjoram, summer savory, and bay leaf.
- Cover closely and simmer for twelve hours.
- Strain, cool, and clear.
