Ingredients for Consomme Recipe

  • 3 pounds each of lean beef and knuckle of veal
  • 4 four quarts water
  • 2 teaspoons salt
  • 1 onion
  • 1 small carrot
  • 1 small turnip
  • 1 blade mace
  • 1 inch of cinnamon stick
  • A sprig of thyme
  • Pinch of sweet marjoram and summer savory
  • 1 bay leaf

Instructions

  1. Use three pounds each of lean beef and knuckle of veal.
  2. Cut into small pieces and add to water.
  3. Add salt, onion, carrot, turnip, mace, cinnamon, thyme, sweet marjoram, summer savory, and bay leaf.
  4. Cover closely and simmer for twelve hours.
  5. Strain, cool, and clear.
