Ingredients for Cold Appetizer Recipe

  • 10 ripe plum tomatoes, seeded and diced
  • 1 medium-sized shallot, diced
  • 10 fresh basil leaves, thinly sliced
  • 1 cup 2 tbsp balsamic vinegar
  • 1 tbsp garlic salt
  • 1 cup 2 tbsp olive oil
  • 2 large baguette breads, sliced 1/2 inch thick
  • 1/2 cup extra olive oil for coating bread
  • 1 tsp garlic powder

Instructions

  1. Dice tomatoes and shallot, and slice basil leaves.
  2. Once prepared, place all three ingredients in a medium-sized bowl. Before continuing, drain juices from bowl.
  3. Mix ingredients thoroughly, then add balsamic vinegar, garlic salt, and olive oil and mix once again. #Cover and place in refrigerator for at least 30 minutes.
  4. Preheat oven to high broil.
  5. Slice bread and place on baking sheet.
  6. Mix together the extra virgin olive oil and garlic powder, then brush top and bottom sides of each piece of bread with mixture.
  7. Broil on high for 3 minutes each side. Serve immediately with bruschetta.
