Ingredients for Coffee Parfait Recipe

  • ½ tablespoon of gelatine
  • 2 yolks of eggs
  • 1/8 cup of cold water
  • Cup of sugar
  • 1 cup of strong coffee
  • 1½ cups of double cream

Instructions

  1. Soak the gelatine in the cold water.
  2. Heat the coffee with half the sugar.
  3. Beat the yolks, add the rest of the sugar and beat again; cook the yolks in the coffee as boiled custard and when slightly thickened add the gelatine and strain into a cold dish; stir until the mixture thickens a little, fold in the cream, beaten solid, and finish as usual.
