Ingredients for Coffee Parfait Recipe
- ½ tablespoon of gelatine
- 2 yolks of eggs
- 1/8 cup of cold water
- Cup of sugar
- 1 cup of strong coffee
- 1½ cups of double cream

Instructions
- Soak the gelatine in the cold water.
- Heat the coffee with half the sugar.
- Beat the yolks, add the rest of the sugar and beat again; cook the yolks in the coffee as boiled custard and when slightly thickened add the gelatine and strain into a cold dish; stir until the mixture thickens a little, fold in the cream, beaten solid, and finish as usual.
