Ingredients for Coconut And Currant Pudding

  • ½ cup coconut, grated
  • ½ cup currants, red or black, washed, picked
  • ½ cup breadcrumbs
  • 3 eggs, beaten
  • 1 2/3 cups milk, scalded
  • ½ cup sugar
  • 1 teaspoon vanilla extract

Instructions

  1. Mix together the coconut, currants, breadcrumbs, sugar, eggs and vanilla extract.
  2. Add gradually the scalded milk.
  3. Turn into a pudding dish.
  4. Set pudding dish in a pan of water.
  5. Bake in moderate oven for about 45 minutes.
