Ingredients for Coconut And Currant Pudding
- ½ cup coconut, grated
- ½ cup currants, red or black, washed, picked
- ½ cup breadcrumbs
- 3 eggs, beaten
- 1 2/3 cups milk, scalded
- ½ cup sugar
- 1 teaspoon vanilla extract
Instructions
- Mix together the coconut, currants, breadcrumbs, sugar, eggs and vanilla extract.
- Add gradually the scalded milk.
- Turn into a pudding dish.
- Set pudding dish in a pan of water.
- Bake in moderate oven for about 45 minutes.
