Ingredients for Cocoanut Pie Recipe

  • 1 cup chopped cocoanut
  • 3 eggs, separated
  • 1 cup cream
  • 1 cup milk
  • 2 tablespoons cornstarch
  • 4 tablespoons cold water
  • 2 tablespoons vegetable shortening
  • 6 tablespoons sugar
  • Vegetable shortening pastry

Instructions

  1. Line 2 pie plates with pastry.
  2. Put milk and cream into saucepan, bring to boiling point, add cornstarch mixed with water.
  3. Remove saucepan from fire, stir in vegetable shortening.
  4. Let stand until perfectly cold.
  5. Beat yolks of eggs and sugar together, then add cocoanut to them.
  6. Add this mixture to milk with stiffly beaten whites of eggs.
  7. Divide into prepared pie plates and bake in moderate oven (325-375 degrees) for 30 minutes.
  8. Serve hot.
