Cocoanut Ice Recipe

Instructions

  1. Boil one-half pound of sugar and one pint of water together for five minutes, add one-half pint of cocoanut milk to the syrup, let it come to a boil once, then cool and freeze.
  2. This will serve five persons.
  3. To obtain a cocoanut with the requisite amount of milk, one must insist upon having a nut with the eyes on the surface.
  4. As the nuts age, they dry, shrinking in the process, and the eyes grow deeper.
  5. A reasonably fresh specimen should furnish a trifle morethan a half pint of milk and the easiest way of extracting it is to drive a nail through the eyes, letting the milk drip through these holes into a bowl.
  6. The meat is thus left intact and ready for other uses.
