Ingredients for Citron Buns Recipe

  • 1 yeast cake
  • 6 tablespoons sugar
  • ¾ cup vegetable shortening
  • ½ cup raisins
  • ¼ cup chopped citron peel
  • 1 teaspoon lemon extract
  • 1 cup scalded milk
  • 1 egg
  • 5½ cups flour
  • ¼ cup lukewarm water
  • 1 teaspoon salt

Instructions

  1. Scald milk, add half of the sugar and salt. When lukewarm, add yeast dissolved in water and 1 1/2 cups flour.
  2. Mix, cover, and let rise until light.
  3. Add vegetable shortening, remainder of sugar and flour, raisins, peel, and extract.
  4. Knead lightly, cover, and let rise.
  5. Divide into small pieces and let rise on greased tins. Brush over with beaten egg and bake at 425 degrees for twenty minutes.
  6. Sufficient for twenty-two buns.
