Ingredients for Citron Buns Recipe
- 1 yeast cake
- 6 tablespoons sugar
- ¾ cup vegetable shortening
- ½ cup raisins
- ¼ cup chopped citron peel
- 1 teaspoon lemon extract
- 1 cup scalded milk
- 1 egg
- 5½ cups flour
- ¼ cup lukewarm water
- 1 teaspoon salt

Instructions
- Scald milk, add half of the sugar and salt. When lukewarm, add yeast dissolved in water and 1 1/2 cups flour.
- Mix, cover, and let rise until light.
- Add vegetable shortening, remainder of sugar and flour, raisins, peel, and extract.
- Knead lightly, cover, and let rise.
- Divide into small pieces and let rise on greased tins. Brush over with beaten egg and bake at 425 degrees for twenty minutes.
- Sufficient for twenty-two buns.
