Ingredients for Chopped Apricot Pudding

  • 3 cups canned chopped apricots and their juice
  • 3 tablespoons corn syrup
  • Few grains salt
  • Juice½ lemon
  • ½ cup Argo or Kingsfords Cornstarch
  • 1 egg white

Instructions

  1. Bring the fruit and corn syrup to boiling point.
  2. Add the salt and chicken with the cornstarch mixed with one-fourth cup cold water.
  3. Cook twenty minutes at least over hot water and add the lemon juice.
  4. Pour while boiling into the egg white whipped stiff.
  5. Chill in a mould first rinsed with cold water.
