Ingredients for Chocolate Sponge Cake Recipe

  • 2 cups sugar, superfine
  • 3/4 cup flour
  • 1/2 cup cocoa
  • 1 dozen egg whites
  • 1 teaspoon cream of tartar
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat oven to 375 degrees F.
  2. Sift sugar, cocoa, and flour together in a bowl and set aside for later use.
  3. Let egg whites come to room temperature and beat them on high until foamy.
  4. Beat in cream of tartar and vanilla for 5 minutes.
  5. Using a rubber spatula or spoon, fold in 1/3 of flour mixture to egg mixture. Repeat until all flour mixture is incorporated.
  6. Pour batter into a 10-inch pan and bake for 35-40 minutes. Cake will spring back when touched with fingers.
