  2. CHOCOLATE SYRUP
  3. Melt
  4. 2 squares unsweetened chocolate over boiling water, add
  5. 2/3 cup sugar and
  6. Few grains salt and stir until well mixed.
  7. Pour on gradually
  8. 3/4 cup boiling water and stir until smooth.
  9. Boil 5 minutes, cool, turn into a jar and keep in ice box or cold place.
  10. Four times this amount may be made and kept on hand for use with hot or iced milk.
  11. FROZEN CHOCOLATE
  12. Put in double boiler
  13. 1 pint milk and
  14. 1 1/4 squares chocolate.
  15. When milk is scalded and chocolate melted pour gradually onto
  16. 3/4 cup sugar, mixed with
  17. 1 egg yolk and
  18. Few grains salt.
  19. Return to double boiler and cook and stir for 1 minute.
  20. Chill, and just before freezing add
  21. 1/2 cup cream, beaten stiff, and
  22. 1/2 tablespoon vanilla.
  23. Freeze, using three parts ice to one part salt.
