Ingredients for Chickens Stewed With Olives Recipe
- 2 chickens, cut into serving pieces
- Butter or vegetable shortening
- 2 dozen olives, chopped
- 1 tablespoon capers

Instructions
- Combine chicken pieces and about 3 pints water in a large pot; add salt, pepper, and onion. Boil until chicken is tender.
- Remove chicken pieces from water and wipe dry. Strain and reserve water.
- Melt butter in a frying pan and add chicken; fry, turning once, until chicken pieces brown.
- Place 1/2 pint of the cooking water and place in a frying pan. Add olives and capers and cook until thickened.
- When it is quite hot and smooth pour over chickens and serve.
