Ingredients for Chickens Stewed With Olives Recipe

  • 2 chickens, cut into serving pieces
  • Butter or vegetable shortening
  • 2 dozen olives, chopped
  • 1 tablespoon capers

Instructions

  1. Combine chicken pieces and about 3 pints water in a large pot; add salt, pepper, and onion. Boil until chicken is tender.
  2. Remove chicken pieces from water and wipe dry. Strain and reserve water.
  3. Melt butter in a frying pan and add chicken; fry, turning once, until chicken pieces brown.
  4. Place 1/2 pint of the cooking water and place in a frying pan. Add olives and capers and cook until thickened.
  5. When it is quite hot and smooth pour over chickens and serve.
