Chicken en Casserole Recipe

Ingredients for Chicken En Casserole Recipe 1
- 1 tender chicken for roasting
- ½ cup butter, softened
- Salt and pepper to taste
- 1 pint hot water
- 1 cup hot sweet cream
- 2 cups chopped mushrooms
- 1 tablespoon chopped parsley
Instructions
- Split down the back. Place in a casserole dish, breast facing up.
- Spread butter over breast; sprinkle with salt and pepper, add hot water, cover closely and cook in a 400 degree oven one hour.
- When nearly tender, put in the cream, mushrooms, and parsley; cover again and cook 20 minutes longer.
- Serve hot in the casserole.
- Note: oysters are sometimes substituted for mushrooms.
