Ingredients for Chicken Vegetable Soup Recipe

  • 2 pounds chicken breast
  • 1 onion, cut into thick slices
  • 5 stalks celery, thickly sliced
  • 1 tablespoon salt
  • 1 teaspoon black pepper
  • 5 carrots, sliced
  • 1 yellow squash, thinly sliced
  • 1 zucchini, thinly sliced
  • 1 pound fresh mushrooms, sliced
  • 2 tablespoons chicken broth
  • 2 cups uncooked egg noodles

Instructions

  1. Put chicken, onion, celery, and seasonings in a large pot.
  2. Add chicken broth to cover the ingredients. If needed, add water to raise level of liquid.
  3. Bring to a boil and let simmer for at least one hour, stirring occasionally, or until chicken is cooked through.
  4. Remove and set aside chicken.
  5. Add remaining vegetables and noodles and cook on medium.
  6. Slice chicken into small pieces and add back to pot. Ingredients should still be covered by water.
  7. Boil for 10 minute or until pasta is done.
