Ingredients for Chicken Timbales Recipe 3

  • 1 cup chicken breast, uncooked
  • 1 cup milk
  • 1 cup bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 5 tablespoon cream
  • 5 egg whites, beaten
  • Cream sauce and peas to serve

Instructions

  1. Put uncooked white meat through a meat-grinder, then rub to a paste with a wooden spoon.
  2. Put milk and bread crumbs into a saucepan and cook until smooth.
  3. Remove from the fire and cool. When it is cold, pour over the chicken, rubbing all the time.
  4. Add a salt, pepper, and cream.
  5. Press through a sieve, and gradually add the well-beaten egg whites; put the mixture into small greased timbale-moulds; stand the moulds in a pan of hot water, cover with oiled paper, and bake for 20 at 350 degrees.
  6. Serve with plain cream sauce and peas.
