Ingredients for Chicken Timbales Recipe 3
- 1 cup chicken breast, uncooked
- 1 cup milk
- 1 cup bread crumbs
- 1 teaspoon salt
- 1 teaspoon pepper
- 5 tablespoon cream
- 5 egg whites, beaten
- Cream sauce and peas to serve

Instructions
- Put uncooked white meat through a meat-grinder, then rub to a paste with a wooden spoon.
- Put milk and bread crumbs into a saucepan and cook until smooth.
- Remove from the fire and cool. When it is cold, pour over the chicken, rubbing all the time.
- Add a salt, pepper, and cream.
- Press through a sieve, and gradually add the well-beaten egg whites; put the mixture into small greased timbale-moulds; stand the moulds in a pan of hot water, cover with oiled paper, and bake for 20 at 350 degrees.
- Serve with plain cream sauce and peas.
