Ingredients for Chicken Rice Soup Recipe

  • 1 cup uncooked wild rice
  • 1 cup water
  • 8 tablespoons butter or margarine, divided
  • 2 skinless, boneless chicken breast halves
  • 1 onion, diced
  • 1/2 cup chopped celery
  • 2 cans condensed cream of chicken soup
  • 2 2/3 cups milk
  • 1 cup sliced carrots
  • 3 tablespoons dried parsley

Instructions

  1. Cube the cube into bite-sized pieces.
  2. Prepare the rice per the package instruction. Set aside.
  3. Melt 3 tablespoons of butter and add the chicken, onion, celery, and carrots.
  4. Cook until chicken is brown and cooked through.
  5. In a pot, stir together the soup and milk until well incorporated.
  6. Add chicken mixture and remaining butter.
  7. Bring to a boil.
  8. Reduce to a simmer and add rice.
  9. Continue to simmer for 10 minutes.
  10. Add parsley and simmer for 5 more minutes.
