Ingredients for Fricasseed Chicken Recipe 1
- 1 chicken, cut into serving pieces
- 2 tablespoons butter
- 2 cups chicken stock
- 2 tablespoons flour
- 1 cup milk or cream
- 1 egg yolk
- Salt and pepper
- Herbs
- Salt pork
- Prepared rice or dumplings for serving

Instructions
- Brown chicken in a pan with the butter.
- Cover with boiling water; add salt, pepper, herbs and a few slices of salt pork.
- Simmer about an hour or until tender; strain and reserve cooking water.
- Mix flour with cold water, blending to a paste. Remove one pint of water that chicken cooked in and stir in flour paste.
- Beat egg yolk into milk or cream and stir this mixture into thickened water.
- Heat again until slightly thickened, pour over the chicken and serve with rice or dumplings.
