Ingredients for Fricasseed Chicken Recipe 1

  • 1 chicken, cut into serving pieces
  • 2 tablespoons butter
  • 2 cups chicken stock
  • 2 tablespoons flour
  • 1 cup milk or cream
  • 1 egg yolk
  • Salt and pepper
  • Herbs
  • Salt pork
  • Prepared rice or dumplings for serving

Instructions

  1. Brown chicken in a pan with the butter.
  2. Cover with boiling water; add salt, pepper, herbs and a few slices of salt pork.
  3. Simmer about an hour or until tender; strain and reserve cooking water.
  4. Mix flour with cold water, blending to a paste. Remove one pint of water that chicken cooked in and stir in flour paste.
  5. Beat egg yolk into milk or cream and stir this mixture into thickened water.
  6. Heat again until slightly thickened, pour over the chicken and serve with rice or dumplings.
