Chicken Fricassee Recipe

Ingredients for Chicken Fricassee Recipe
- 1 chicken
- 1 tablespoon butter
- 1 teaspoon lemon juice
- ½ teaspoon celery salt
- 2 tablespoons flour
- 1 cup cream
- 1 egg
- ¼ teaspoon pepper
Instructions
- Cut the chicken into serving pieces.
- Wipe each piece, sprinkle with salt and pepper, and roll in flour.
- Melt butter in a pan, and brown the chicken pieces.
- Add boiling water to cover and simmer for 40 minutes.
- Remove the chicken, reduce the stock to 1 pint, and set aside.
- For the sauce, melt butter, add flour and seasonings, and cook over low heat. Add the reserved broth and lemon juice, a little at a time, and cook until smooth.
- Add the scalded cream and stir. Pour this mixture slowly over the beaten egg and stir well.
- Arrange the pieces of chicken on a hot platter and garnish with toast points.
- Pour the hot sauce over the top.
