Chicken Bisque Recipe

Ingredients for Chicken Bisque Recipe

  • 1 chicken
  • Cold water
  • 1 large chicken, minced
  • 3 stalks celery, finely minced
  • 1 cup milk
  • Pinch baking soda
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 tablespoon parsley, minced
  • 1 cup cracker crumbs

Instructions

  1. Place chicken in a large pot and add cold water to cover.
  2. Add a large minced onion and 3 stalks of finely minced celery.
  3. Cook slowly over low heat, covered, until the flesh slips from the bones.
  4. Put all aside to cool.
  5. When cold, skim, remove chicken from the soup and separate the bones and meat. Chop the meat fine.
  6. Heat soup over low heat.
  7. While the soup is heating, add milk to a small saucepan and add a pinch of soda; stir.
  8. Run flour into the butter and add to the milk. Stir in parsley.
  9. After the soup has boiled for a few minutes, add the chopped chicken and the cracker crumbs.
  10. Boil one minute, then beat in the milk and butter and pour out into the tureen.
