Ingredients for Chicken Bisque Recipe
- 1 chicken
- Cold water
- 1 large chicken, minced
- 3 stalks celery, finely minced
- 1 cup milk
- Pinch baking soda
- 1 tablespoon butter
- 1 tablespoon flour
- 1 tablespoon parsley, minced
- 1 cup cracker crumbs
Instructions
- Place chicken in a large pot and add cold water to cover.
- Add a large minced onion and 3 stalks of finely minced celery.
- Cook slowly over low heat, covered, until the flesh slips from the bones.
- Put all aside to cool.
- When cold, skim, remove chicken from the soup and separate the bones and meat. Chop the meat fine.
- Heat soup over low heat.
- While the soup is heating, add milk to a small saucepan and add a pinch of soda; stir.
- Run flour into the butter and add to the milk. Stir in parsley.
- After the soup has boiled for a few minutes, add the chopped chicken and the cracker crumbs.
- Boil one minute, then beat in the milk and butter and pour out into the tureen.
