Chestnut Croquettes Recipe 1

Ingredients for Chestnut Croquettes

• 2 cups hot mashed chestnuts
• 4 tablespoons butter or other fat
• Salt and Pepper
• 2 eggs
• Few drops onion juice or 2 tablespoons finely chopped onion
• Egg and crumbs

Instructions

1. Mix the chestnuts, butter, slightly beaten eggs and seasonings.
2. Shape into croquettes.
3. Roll in crumbs, beaten egg and crumbs.
4. Fry in deep hot fat until crumbs are brown.
5. The croquettes may be served with brown sauce or tomato sauce.
