Cheese Straws Recipe

Instructions

  1. A pleasing variation of the old but always popular cheese straws and cheese fingers, is made thus: Melt one tablespoon of butter, add one and one-half tablespoons of flour and pour on one- fourth cup of milk.
  2. Add one-fourth cup, each, of grated cheese and cheese cut in small cubes, and one egg white, unbeaten.
  3. Season with salt, paprika and cayenne.
  4. Bake pastry in fingershaped pieces, split and spread with cheese mixture.
  5. Heat slightly before serving.
