• 4 whites of eggs
• Pinch of cayenne and salt
• 1 1/2 ounces grated cheese
• 1 ounce butter

Instructions

1. Whip the whites slightly and add the cayenne and salt.
2. Stir in the cheese lightly.
3. Melt one ounce of butter in the pan and stir in the omelet until set.
